This recipe is a tasty and easy way to introduce kale into your diet.
This recipe is great for one person.
What You'll Need:
3 Organic, free range chicken eggs (these eggs have the best health benefits)
1 1/2-2 large handfuls of Kale, chopped
1 med, ripe tomato
1/2 yellow or Vidalia onion, chopped
1-2 slices of low-fat cheese
Sea Salt and/or Pepper to taste
How to Prepare:
Scramble the three eggs in a small bowl with a little bit of skim milk and set aside.
Round a skillet over medium heat with EVOO two times. Add the onion and saute for about 3 minutes. Add the chopped kale and continue to saute. It may look like a lot of kale, but it shrinks considerably as it cooks.
Saute the Kale and onion for another three minutes and then add the tomatoes. Continue to saute until the vegetables are just about cooked, which will keep the colors vibrant and give the vegetables a little crunch to them. Season with the salt and/or pepper.
Hint: Try skipping the salt so you can taste all of the flavors.
Add the egg and scramble for about a minute or until the eggs are no longer liquid. Add the slices of cheese, broken up into pieces.
Season to taste and Voila!
